When you marry an Italian and have a brother-in-law that just got back from Italy you step up your Italian cooking game.... Sunday nights are the best for experimenting in the kitchen and trying your best to create new iconic family meals. It's a whole new way to Sunday Funday. Try this one for your next comfort meal.
Ingrediants: (For a serving size of 4)
- Pappardelle pasta
- Salt
- Pepper
- Crushed red pepper (1/4 tsp)
- Olive oil (1 tbsp)
- Butter (1 stick)
- Garlic (4 cloves)
- Pesto (1/4 cup)
- Lemon juice (1 tsp)
- Parmesan cheese (1/4 cup)
- Fresh basil (optional)
Directions:
- Melt one stick of butter in a sauce pan on low heat.
- Crush the garlic and add to the sauce pan whisking occasionally.
- Boil water for your pasta adding a pinch of salt and 2 tbsp of olive oil.
- Add the pesto and lemon juice, crushed red pepper and a dash of fresh ground pepper to the sauce mixture and continue to stir occasionally.
- Gradually add the Parmesan cheese and continue to stir as it melts.
- When the water comes to a boil add the pasta in and cook as desired.
- Keep the sauce on low heat and mix in after straining the pasta.
- Plate and top with fresh basil.
- Enjoy!
